Tomato Basil Soup


1 medium onion, diced
2 clove garlic, minced
1 tsp salt
1/2 tsp pepper
2 can crushed tomatoes
1 1/2 cup almond milk
2 Tbsp basil

Instructions:
Over medium heat in a sauce pan add olive oil.
Once heated add onion and garlic.  Cook until onions are translucent.
Add remaining ingredients.
Cook 10-15 minutes.
Blend with an immersion blender until smooth.

Makes 4-6 servings.
