1 1/2 can black beans, drained and rinsed
1 cup onion, chopped
1 cup red bell pepper, chopped
2 cloves garlic, minced
1 jalapeno, diced
1 cup vegetable stock
1/2 tsp cumin
1/2 tsp salt
1/8 tsp cayenne
Instructions:
In a crockpot on low heat, add all the ingredients. Cook on low 6-hours.
Makes 4 to 6 servings.
